The rice is carefully washed, soaked, and steamed into firm rice called godubap.
This process prepares the starches for fermentation and creates the foundation of the flavor.
The cooled rice is mixed with water and Nuruk, a traditional Korean fermentation starter.
Natural enzymes and yeast convert the rice starch into sugar, then into alcohol.
The makgeolli slowly ferments over several days at a controlled temperature.
During this stage, its natural carbonation, probiotic cultures, aroma, and depth of flavor develop.
The fermented makgeolli is filtered and bottled fresh.
Because it is a living, unpasteurized beverage, it continues to naturally evolve and carbonate in refrigeration.
